苏淮猪高肌内脂系的生长胴体和肉质性能的研究

摘要:为了探究苏淮猪高肌内脂系的生长、胴体和肉质性能的特性,本试验选取了苏淮猪27头和苏淮猪高肌内脂系(含有25%莱芜猪和75%苏淮猪血统)12头,共计39头,在相同营养水平及饲养管理水平下进行饲养,比较其生长、胴体性能和肉质指标的差异。结果显示:在生长性能方面,苏淮猪高肌内脂系的平均日增重极显著低于苏淮猪的平均日增重(399.21 g vs 458.65 g,P ﹤ 0.01),其他指标差异均不显著(P ﹥ 0.05);在胴体性能方面,苏淮猪高肌内脂系的眼肌面积显著低于苏淮猪的眼肌面积(334.98cm2 vs 378.27cm2, P ﹤ 0.05),而高肌内脂系猪的平均背膘厚、6-7肋背膘厚、校正6-7肋背膘厚均显著高于苏淮猪的平均背膘厚、6-7肋背膘厚、校正6-7肋背膘厚(P ﹤ 0.05),其他指标差异均不显著(P ﹥ 0.05);苏淮猪高肌内脂系的剪切力显著低于苏淮猪的剪切力(3.84 kg*f vs 4.70 kg*f,P ﹤ 0.05),高肌内脂系猪的肌内脂肪极显著高于苏淮猪的肌内脂肪(1.99% vs 4.29%,P ﹤ 0.01),其他指标均无差异(P ﹥ 0.05)。综合评定:虽然高肌内脂系猪的生长性能和胴体性能方面低于苏淮猪,但高肌内脂系猪的猪肉在肉质性状方面显著优于苏淮猪,苏淮猪高肌内脂系猪可以作为苏淮猪中一个高端肉质新品系进行培育。28367

Comparison of growth performance, carcass and meat quality traits between two lines of Suhuai pigs
Abstract:In order to compare the growth performance, carcass and meat quality traits between two lines of Suhuai pigs, 27 Suhuai pigs and other 12 Suhuai pigs from high intramuscular fat line (crossbreed with 25% Laiwu pig and 75% Suhuai pig) were selected in this study. The growth performance, carcass and meat quality traits of two lines were determined under the same nutrient level and feeding and management conditions. The result showed that the average daily gain of Suhuai pigs from high intramuscular fat line was significantly lower than that of Suhuai pigs (399.21 g vs 458.65 g,P < 0.01) ,while there were no changes in other indicators (P > 0.05) in growth performance. In carcass performance, the area of eye muscle of Suhuai pigs from high intramuscular fat line was lower than that of Suhuai pigs (334.98cm2 vs 378.27cm2,P < 0.05), but the average backfat thickness, 6-7 ribs backfill thickness, corrected 6-7 rib backfat thickness of Suhuai pigs from high intramuscular fat line were higher than those of Suhuai pigs(P < 0.05).There were no differences in other indicators (P > 0.05).In meat quality,Shear force of Suhuai pigs from high intramuscular fat line was lower (3.84 kg*f vs 4.70 kg*f,P < 0.05) and the intramuscular fat of Suhuai pigs from high intramuscular fat line was significantly higher than that of Suhuai pigs (1.99% vs 4.29%,P < 0.01).In conclusion, The growth performance and carcass performance of Suhuai pigs from high intramuscular fat line are more lower than those of Suhuai pigs, but the meat quality of Suhuai pigs from high intramuscular fat line is significantly better than that of Suhuai pigs. Suhuai pig from high intramuscular fat line can be used as a high-grade fleshy new line of Suhuai pigs.
