红枣色素提取工艺及稳定性研究

摘要:本文研究了红枣色素的提取工艺及稳定性。通过以红枣和枣粉为原料,采用了溶剂提取、超声波辅助以及微波辅助的方法浸提红枣色素,比较不同提取方法对红枣色素提取的影响,对红枣色素的提取工艺进行了初步研究。通过单因素试验,研究了浸提剂浓度、浸提温度、料液比、浸提时间、pH值、枣皮与枣肉6个单因素对红枣色素提取效果的影响,并在此基础上安排了正交试验,确定出最佳条件是:浸提剂NaOH浓度为0.4mol/L、浸提温度为70℃、料液比为1:35(g/mL)、浸提时间为4h。同时还进行了强氧化剂和还原剂对红枣色素提取稳定性的研究,结果表明,红枣色素对还原剂稳定性较好,但对强氧化剂稳定性较差。29874

Study on the extraction and stability of red pigment from Jujube
Abstract:This paper is a study on the extraction process and stability of jujube pigment. By with jujube and jujube powder as raw material, using the solvent extraction, ultrasonic assisted and microwave-assisted method for extracting red pigment from red jujube, effect comparison of different extraction methods on red pigment extraction, the extraction process of red jujube pigment were preliminary research. Through the single factor experiment, the extraction agent concentration, extraction temperature, ratio of solid to liquid ratio, extraction time, pH value, jujube skin and jujube meat 6 single factor of red jujube pigment extraction effect influence, and on this basis arranged orthogonal test, to determine the optimum condition is: extracting agent NaOH concentration is 0.3mol/L, extraction temperature of 70 ℃, the ratio of material to liquid 1:35 (g :mL), extraction time is 4h. The stability of red pigment was studied by the strong oxidant and reducing agent. The results showed that the stability of the red pigment was better for reducing agent, but the stability of the strong oxidant was poor.
