摘要:本课题的主要研究内容为首先定量定性分析茉莉精油中的特征香气成分进行,其次研究茉莉香精中特征香气物质对茉莉精油整体香气的协同作用。运用GC-MS,结合GC-O分析确定了三种茉莉精油样品的特征香气成分48种,并结合内标法和标准曲线法对香气物质进行定量分析。采用强度法结合感官分析研究发现茉莉精油中果香对花香有加成作用,青香和木香对花香有部分加成作用,药香对花香有掩盖作用。采用S曲线法研究发现果香对花香有加成作用,青香和木香对花香有部分加成作用,药香对花香有掩盖作用。在深入的探究了香气物质间协同机制的基础上,研究了茉莉花香的特征香气组成与香韵结构之间的相互协同作用。为更好的研究和评价天然茉莉花类精油的香气质量,调配逼真、和协和饱满的高品质花香香精提供指导和服务,对改进茉莉香精的香气品质具有十分重要的意义。

Study on Aroma Synergy Technology of Jasmine
Essential Oil
Abstract:The main research content of this topic is to quantitatively and qualitatively analyze the characteristic aroma components in the jasmine essential oil, and then to study the synergistic effect of the characteristic aroma substances in the jasmine essence on the overall aroma of the jasmine essential oil. GC-MS and GC-O analysis were used to determine 48 kinds of characteristic aroma components of jasmine essential oil samples, and aroma substances were quantitatively analyzed by using internal standard method and standard curve method. Using intensity method combined with sensory analysis, it was found that fruit scent in jasmine essential oil has an additive effect on floral scent. Green and woody notes have a partial additive effect on floral scent. Medicinal scent has a masking effect on floral scent. S-curve study found that the fruit has an additive effect on the floral, green and woody have a partial additive effect on the floral, medicinal incense has a masking effect on the floral. Based on the in-depth exploration of the cooperative mechanism between aroma substances, the synergistic interaction between the characteristic aroma components and the aroma structure of Jasmine flowers was studied. In order to better research and evaluate the aroma quality of natural jasmine essential oils, and provide guidance and services with realistic and coordinated high-quality floral fragrances, it is of great significance to improve the aroma quality of jasmine essences.
