摘要:本文通过体外模型法,研究肠道菌群与葡萄籽花青素在模拟肠道环境条件下进行 共同培养后,其抗氧化活以及肠道菌的变化。通过对发酵液的菌落数、pH、DPPH 自由基 清除率、ABTS 自由基等相关指标进行分析发现:葡萄籽花青素能提高乳酸菌对胆酸盐耐 受能力,发酵液的抗氧化能力在发酵过程中不断增强,当花青素浓度在 50-200mg/L 的范 围内,其抗氧化能力与花青素浓度存在一定的剂量效应。另外,花青素可以调节肠道有益 菌,抑制有害菌,抑制作用随着浓度的上升而增强,降 pH,低 pH 条件也有利于肠道益生 菌的生长,抑制有害菌。本研究表明葡萄籽花青素可提高肠道有益菌比例,并且其经肠道 菌群代谢,提高了其抗氧化活性。66285

Study on the interaction between intestinal flora and anthocyanin Abstract:In this paper,a Vitro model is established to study the change of grape seed proanthocyanidin antioxidant activity under the action of the intestinal flora.Also,the intestinal bacteria content is involved in the study.The colony forming units,pH,DPPH clear rate,ABTS clear rate and so on of the zymotic fluid indicated that grape seed anthocyanins can improve the tolerance of lactic acid bacteria to bile salts and the antioxidant capacity of the fermentation broth increased with time .When anthocyanin concentration was in the range of 50-200mg/L, there was a dose-dependent effect betweenn the antioxidant capacity of anthocyanin and the concentration.Besides,anthocyanin could not only regulate the intestinal bacteria ,but also produce an inhibition in the harmful bacteria,and the inhibition was enhanced with the increase of anthocyanin concentration. Lowering pH and low pH were also beneficial to the growth of intestinal probiotics and inhibiting harmful bacteria.This study showd that grape seed procyanidins increased the proportion of intestinal bacteria, and its antioxidant activity was improved after the intestinal flora metabolism.
