摘要:随着人民生活水平的提高,膳食中油脂的比例不断增加,可诱发血脂代谢紊乱,危害人体健康。苦荞蛋白作为一种全价蛋白,具有人体所需的所有氨基酸,并且各种氨基酸所占比例合理,营养价值高[1]。本文采用高脂饮食诱导小鼠高脂血症模型,通过测定小鼠甘油三酯(TG)、血清胆固醇(TC)、肝甘油三酯及血糖(GLU)、高密度脂蛋白胆固醇(HDL-C)、低密度脂蛋白胆固醇(LDL-C)等血常规的变化,来对苦荞蛋白质的降血脂及抗氧化作用进行研究,为预防和治疗高脂饮食造成的疾病和开发苦荞减少脂质的产品提供理论基础[2]。实验结果表明:高脂组(HFD)小鼠体重增长率最大,达到了11.53%,喂食含有苦荞蛋白(BWP)的饲料后,腹脂率显著降低。HFD组血清中的TC,TG含量最高;食用含有BWP的饲料后HDL-C有升高,LDL-C有显著降低(P<0.05),在HFD组,血清胰岛素(INS)含量显著增加(P<0.05),苦荞蛋白能增强抗氧化酶活性,减少脂质过氧化。HFD组小鼠在血脂升高的同时,超氧化歧化酶(SOD) ,总抗氧化能力(T-AOC)和过氧化氢酶(CAT) 活性显著下降(P<0.05),而且肝脏匀浆液中的丙二醛(MDA) 含量也显著升高(P<0.05)BWP能显著降低MDA含量(P<0.05),提高肝匀浆T-AOC活性,但未达到显著水平(P<0.05),肝脏匀浆中SOD和CAT的活性显著提高(P<0.05)。43773

The functional study on the serum lipids of plant protein
Abstract:With the improvement of people's living standard, the proportion of fat in diet has been increasing, which can induce the disorder of blood lipid metabolism and endanger human health. Buckwheat protein as a full price protein, with all the amino acids needed by the human body, and a reasonable proportion of all kinds of amino acids, high nutritional value of [1]. In this paper, the high fat diet induced derived mice hyperlipidemia model, provide theoretical basis for [2] by changes in blood were measured triglyceride (TG), serum total cholesterol (TC), hepatic triglyceride and blood glucose (Glu), high density lipoprotein cholesterol (HDL-C), low density lipoprotein cholesterol (LDL-C) etc., of Tartary Buckwheat Protein on lowering blood lipid and antioxidation was studied in this paper. For the prevention and treatment of high fat diet caused by disease and development of Tartary Buckwheat reduced fat products. Experimental results showed that high fat diet (HFD) in mouse body weight growth rate, reaches 11.53% and fed with feed protein from Tartary Buckwheat (BWP) and abdominal fat rate decreased significantly. HDL-C increased in HFD group, serum TC and TG content highest; edible contains the BWP feed, LDL-C decreased significantly(P<0.05), in the HFD group, the serum insulin (INS) content significantly increased (P<0.05) of buckwheat protein can enhance the antioxidant enzyme activity, reduce lipid peroxidation. HFD mice of elevated blood lipids at the same time, the activity of superoxide dismutase (SOD) and total antioxidant capacity (T-AOC) and catalase (CAT) decreased significantly (P<0.05) and liver homogenate malondialdehyde (MDA) content significantly increased(P<0.05). BWP could significantly decrease the content of MDA(P<0.05), and increase the T-AOC activity of liver homogenate, but did not reach the significant level (P<0.05). The activity of SOD and CAT in liver homogenate was significantly increased (P<0.05).
