摘要:肌内脂肪与肉制品的风味品质和食用价值有很大的关系。目前,人们对肉制品的风味以及感官品质的要求越来越高,作为影响猪肉食用品质的重要因素,肌内脂肪含量越来越受到人们的关注。肌内脂肪的生成受到营养和基因的调控,研究发现,糖皮质激素受体基因通过影响糖皮质激素作用而影响脂肪代谢,是脂肪合成代谢中起重要作用的基因,猪GR基因第七内含子片段对猪脂肪性状具有一定的影响。糖皮质激素对脂肪细胞的代谢,分泌和免疫功能有重要影响,并能抑制脂肪组织炎症发生。本课题根据近年来GR基因对肌内脂肪影响的研究进展设计实验,并以商品猪为实验动物探究该基因是否存在SNP位点与肌肉内脂肪具有相关性。

The exploration of correlation about glucocorticoid receptor gene and intramuscular fat
Abstract:Intramuscular fat has a great relationship with the flavor quality and edible value of pork
products. Currently, people demand the flavor and sensory quality of meat increasingly higher. As a significant factor affecting the quality of edible pork, intramuscular fat content is getting more and more attention. Generation of intramuscular fat is regulated by genes and nutrition.The study found that the glucocorticoid receptor gene through the effect of glucocorticoid secretion affects fat metabolism, which plays an important role in the gene. And gene fragment of porcine GR gene seventh intron has a certain impact on pig fat traits. Glucocorticoids have an important influence on the metabolism, secretion and immune function on adipose tissue, and can inhibit the occurrence of inflammation of adipose tissue. This topic according to GR gene in recent years the research advances in the effect of intramuscular fat design experiments, and exist in commercial for experimental animals to explore whether the gene SNP loci associated with intramuscular fat.
