摘要:本论文以植物乳杆菌作为菌种,通过工艺优化进行高密度培养,对获得的菌体进行冷冻干燥处理,并优化冻干工艺。首先以pH和活菌数为指标,通过单因素对乳酸菌发酵过程进行优化,最后通过响应面实验,得出最适培养温度为37℃,初始pH6。30,添加2%酵母抽提物、果糖、麦精,0。7%番茄汁以及接入1。1%乳酸菌培养24小时,活菌数为4。4×109CFU/mL。通过进行冷冻干燥的工艺优化,最终获得最适冻干保护剂配方:脱脂乳粉100g,乳糖100g,抗坏死血酸钠10g,谷氨酸钠10g。1:10比例与菌泥混合,得到的冻干菌粉活菌数为4。3×1011CFU/g。81291
