摘要:本课题欲将葡萄酒的酒精度、糖度、酸度和苦涩度以电子信号的方式表达出来,并根据信号强度的强弱来判断其相应指标的浓度,从而实现四项指标的快速检测。分别使用酒精、葡萄糖、酒石酸以及没食子酸作为葡萄酒酒精度、糖度、酸度以及苦涩度的代表物并配置一系列浓度的标准溶液,以酒精计法、3,5-二硝基水杨酸法、电位滴定法以及Folin-Ciocalteus法测定标准溶液的酒精、总糖、总酸以及总酚的含量。以电子舌测定四种代表物的标准溶液的电信号强度,并建立酒精度、糖度、酸度、苦涩度的PLS模型,观察标准溶液浓度与电信号强度两者间的关系,再以电子舌对酒样进行测试,将酒样的数据带入所得到的四个PLS模型中,观察酒样的指标是否能被明显区分和比较,从而验证本方案的可行性。27831
