摘要:目前,国内外许多研究皆证明美拉德反应产物具有抗氧化活性,本课题论文以全聚德烤鸭为原料,通过对烤鸭进行切碎、用无水乙醚浸提、水煮、旋转蒸发、超滤一系列处理后,分别采用DPPH自由基清除法、ABTS自由基清除法、测定还原力、羟基自由基清除法四种方法测定烤鸭水溶性粗提物、二次提取物和三次提取物水溶液的体外抗氧化活性,研究了烤鸭美拉德反应产物的抗氧化性能及不同浓度样品抗氧化活性的变化。结果表明:烤鸭水溶性美拉德提取产物具有一定的体外抗氧化活性。粗提物的抗氧化活性随样品溶液浓度增大而增大。超滤后二次提取物的抗氧化活性降低,这可能是因为超滤过程中抗氧化成分得到了有效的分离。经凝胶层析得到的四个峰所对应的三次提取物中,峰二对应的样品的抗氧化能力最强。7360

Study on Antioxidant Activity of water-soluble extracts in roast duck
Abstract:At present, many domestic and foreign research have proven Maillard reaction products have antioxidant activity. Quanjude roast duck was chose as experimental material due to its representation. After a series of treatments such as cutting duck into pieces, boiling, co-evaporating method, four methods, which were DPPH, ABTS, reducing power method and hydroxyl radical scavenging method, were utilized in measuring antioxidant ability of aqueous crude extract,the secondary and the third extract of duck. Then, relationships between sample concentration and antioxidant strength were also studied through measuring several samples with different concentrations. Results demonstrated that water-soluble extract of duck showed certain antioxidant capacity. The antioxidant ability increased with increasing concentration of samples. Antioxidant activities of the samples were decreased after ultrafiltration, it may be because the antioxidants have been effectively separated in ultrafiltration process. Among the four samples obtained through Gel chromatography, sample of the second peak had the highest antioxidant activity in the chromatograghy.
