溶剂浸提法紫甘蓝色素提取研究

摘要: 园林植物在改善环境,保护环境,美化环境方面有着重要作用,园林植物中的天然色素也让人们的生活质量得到提高。随着科技的发展和人民生活水平的渐渐提高,人们发觉食用合成色素对人体健康有着不良影响和不可避免的危害。继而,天然色素开发和应用日益受到人们的重视。紫甘蓝作为一种蔬菜,在我国大部分地区广泛种植,且价格低廉。紫甘蓝色素属于花青素类物质,具有明亮的红色至紫红色。本实验中,选取合适的提取剂从紫甘蓝中提取色素并对其提取工艺进行优化;采用可见光谱对紫甘蓝色素结构进行表征;利用配制好的色素溶液,探讨影响提取率的各种因素,如溶液及其浓度、溶液pH值、提取温度、提取时间等对提取的影响规律。进而,研究紫甘蓝色素的稳定性。选取常见的食品防腐剂进行实验。研究提取出的紫甘蓝色素溶液在防腐剂中的稳定性,选取最适的防腐剂及其浓度。通过单因素试验得知溶剂浸提法提取紫甘蓝花色苷的最优提取条件为:提取剂为蒸馏水、料液比为1:40,提取时间为 30min、提取温度为30℃,提取PH值为7。紫甘蓝色素的提取研究对天然色素在食品、化妆品中的使用有着指导意义。20690

People is higher and higher requirement for the quality of life, have begun to focus on edible synthetic pigment influence and harm to human body health, natural pigment of this emerging industry development and use of increasingly brought to the attention of the people.A plant aroused people's concern, purple cabbage, purple cabbage in most parts of our country has grown, and low cost In this study, selecting suitable extractant to extract pigment from purple cabbage and optimize the extraction process, The visible spectrum of purple cabbage pigment structure characterization,The extraction solvent polarity, time, temperature, PH of the influence of pigment;.On this basis, to do further research on the stability of purple cabbage pigment, selecting of common food preservative. Solvent extraction determined by single factor experiments of anthocyanins extracted purple cabbage: best condition for material liquid ratio of 1:40,  extracting time for 30 min, extraction temperature 30 ℃,Extracting the PH value of 7,extraction solvent for distilled water. Purple cabbage pigment is extracted from the purple cabbage, belongs to the anthocyanins. Purple cabbage pigment extraction and the research of natural pigments used in food, cosmetics has guiding significance.
