    摘要:本文研究了高分辨质谱多级质谱分析食用油中甘油三酯的方法。使用异丙醇为溶剂,将食用油溶解后加入氯仿,然后使用多级质谱进行检测。采用效果较好的APCI源,进样流速为1200μL/h,干燥气温度为180℃,APCI电晕针电流为5000nA,对食用油进行高分辨质谱的测定。先以甘油酸三油脂为标样探索碎裂规律,对油中的一级质谱中较高的峰,测定其二级质谱,确定甘油三酯中1位和3位的单个脂肪酸。根据多级质谱反馈的信息,得到2位的脂肪酸种类,从而推出油中含有的甘油三酯的结构。使用该方法,实际测定了玉米油,豆油,葵花子油,橄榄油,猪油的主要甘油三酯的类型。并在玉米油中检测到9种甘油三酯,在豆油中检测到9种甘油三酯,在葵花子油中检测到4种甘油三酯,在橄榄油中检测到7种甘油三酯,在猪油中检测到8种甘油三酯,该法方便快捷高效。21273

    Use High-resolution multi-stages mass spectrometry to identify triglycerides in the oil
    Abstract:  The essay studies about the method of multi-stages mass spectrometry to analysis triglyceride in oil. The solvent is isopropyl alcohol, chloroform is added to the oil, and multi-stages mass spectrometry is used for test. Using a better APCI source, which feeding velocity is 1200 mu L/h, drying temperature is 180 ℃, and APCI current is 5000 nA, to measure cooking oil by high resolution mass spectrometry. Measure the highest peak’s secondary mass spectrometry, determine the first one and third fatty acids in triglycerides. Analyze fracture rules of triolein as a prototype, obtain two kinds of fatty acid according to the multi-stages mass spectrometry feedback information, and deduce the structure of triglyceride in the oil. Use this method the main types of triglycerides are measured in the corn oil, soybean oil, sunflower oil, olive oil, and lard. 9 kinds of triglycerides are detected in the corn oil, 9 kinds of triglycerides detected in soybean oil , 4 kinds of triglyceride are detect in sunflower oil, 7 kinds of triglycerides are detected in the olive oil, and 8 kinds of triglycerides are detected in pigs. This method is easy and fast, and a lot of time of handling or separation can be saved.
