摘要:γ-癸内酯(GDL)是一种内酯类香物质,主要用于配制奶油、桃子、柑橘和椰子型等香精。本文对酵母菌以蓖麻油酸为底物发酵生产γ-癸内酯的乳化体系构建,及其对产物转化的影响进行了研究。此发酵体系为水包油体系,油相底物难以进入酵母,阻碍酵母对底物蓖麻油酸的利用与转化,故本实验通过向培养基中加入不同的表面活性剂,助表面活性剂,以及进行表面活性剂的复配从而使发酵液乳化,研究不同情况下底物粒径的变化与γ-癸内酯产量间的关系;研究底物粒径与酵母对底物的利用、γ-癸内酯生产间的关系。本课题实验结果表明:单独使用表面活性剂吐温 20的乳化效果及生产的γ-癸内酯产量最佳,在底物与吐温 20加入的浓度配比为10:1,助表面活性剂甘油与吐温 20加入的浓度配比为1:2时,产物γ-癸内酯的转化情况有最为明显的提高,可从0.34g/L提升至0.53g/L,γ-癸内酯的产量增加了55.9%。产物γ-癸内酯的转化情况与底物的粒径及分散系数,即与酵母菌发酵生产γ-癸内酯的乳化体系的乳化情况有一定的关联。35937

The construction of the emulsifying system of producing  γ- decalactone by fermentation from yeast and its impact on the transformation of product
Abstract:γ-decalactone (GDL) is a fragrance substance lactones, mainly used for the preparation of flavor of cream, peach, citrus and coconut, etc. In this paper, the construction of the emulsifying system of producing γ-decalactone by fermentation from yeast and its impact on the transformation of product were investigated. This fermentation system is O/W, the oil phase substrate is difficult to enter the yeast, it block the utilization and conversion of substrate ricinoleic acid by yeast, so the relationship between different size of substrate and the productivity of γ-decalactone in different situations, the relationship between the size of substrate and utilization of substrate by yeast, and the relationship between the size of substrate and the productivity of γ-decalactone were investigated by adding different surfactants and cosurfactant to the medium, and compounding the surfactants to emulsify the fermentation liquor in this report. The result shows: The best effect on emulsifying and the productivity of γ-decalactone is using Tween 20 alone, and when it is added with the substrate: Tween 20=10:1, cosurfactant glycerol: Tween 20=1:2, the transformation of product γ-decalactone is increased obviously, from 0.34g/L to 0.53g/L, production of γ-decalactone increased by 55.9%. And there has some relative between the transformation of γ-decalactone and substrate size and coefficient of dispersion. In other words, there has some relative between the transformation of γ-decalactone and yeast fermentation production of emulsifying γ-decalactone emulsion system.
