摘要:选取国内5种知名品牌白酒,利用顶空固相微萃取法(HS-SPME)提取酒样中的挥发性成分,通过气相色谱—质谱联用(GC-MS)技术,分别对5种酒的挥发性成分进行分析,检测出白酒酒样中的挥发性物质。在该条件下5种酒分析出180种挥发性物质,其中酯类物质100种,醇类物质32种,醛类物质14种,酸类物质9种,酮类物质13种,酚类物质4种,烷烃类8种,呋喃类5种,烯烃类2种,含氮化合物2种,含硫化合物1种。研究发现白酒中除酯类、醇类、酸类、醛酮类,酚类、呋喃类等主要的挥发性物质外,还有少量含硫化合物,因此,借助气相色谱-火焰光度检测器(GC-FPD)对含硫化合物检测高效、专一性强的特点,建立了一种简单、快速检测白酒中含硫化合物的方法,利用该方法在5种白酒检测出22种含硫化合物。63210

Characterization of Volatile Compounds of    Chinese Famous Liquors by HS-SPME-GC-MS and                      GC-FPD

Abstract:In order to research volatile compounds in liquors, 5 Chinese famous liquors had been selected and investigated. The volatile compounds in liquors were extracted by headspace solid-phase microextraction (HS-SPME).And then the volatile compounds were analyzed by gas chromatography-mass spectrometry(GC-MS). A total of 180 volatile compounds were detected and identified , including 100 esters, 32 alcohols, 14 aldehydes, 9 acids, 13 ketones and 4 phenols, 8 acetals, 5 furfurans, 2 alkenes, 2 nitrogenous compounds, and 1 sulfuric compound. Several sulfur compounds were found in liquors in addition to esters, alcohols, acids, aldehydes and ketones, phenols, furfurans and so on. Therefore, A simple and rapid method to detect sulfur compounds in liquors was established with the help of high efficiency and specificity of gas chromatography-flame photometric detector(GC-FPD) to sulfur compounds. Moreover, a total of 22 sulfur compounds in five liquors were detected.
