栀子蓝色素发酵工艺及稳定性研究

摘要:本实验通过遵循控制单一变量的原则,进行单因素实验与正交实验,研究栀子蓝色素最佳生产工艺条件。通过不同的溶剂、水浴温度、料液比、醇提浓度、提取时间等来确定栀子黄的最佳提取条件为乙醇水溶液提取,浓度为60%;最佳料液比为1:50;水浴温度60℃;;水浴时间3小时。同时栀子蓝发酵的最佳条件为用枯草芽孢杆菌发酵,液体培养基中碳源为葡萄糖,添加量为2%;氮源为大豆蛋白,添加量为2%;摇床转速为150rpm/min。71236

Study on fermentation technology and stability of gardenia blue pigment

Abstract:In this experiment, single factor experiments and orthogonal experiments were conducted to study the optimum production conditions of gardenia blue pigment by observing the principle of controlling single variables. By different solvents, water bath temperature, solid-liquid ratio, ethanol concentration, extraction time to determine the optimum extraction conditions for the extraction of gardenia yellow aqueous solution of ethanol concentration was 60%; the optimal solid-liquid ratio was 1:50; temperature is 60 DEG C; water bath time 3 hours. At the same time, the optimum conditions for gardenia blue fermentation were Bacillus subtilis fermentation, the carbon source in liquid medium was 2%, the amount of added nitrogen was soybean protein, the adding amount was 2%, and the shaking speed was 150rpm/min.
