摘 要灵芝主要药效成分为灵芝多糖,GLP具有提高机体免疫功能、抗肿瘤、抗衰老、抗氧化和降血糖等作用。牛蒡有抗癌、抗菌、抗衰老三大功效。为研制出集灵芝和牛蒡个功效于一体的饮品,所以本次研究选取牛蒡灵芝复合多糖为原料,首先对获得的牛蒡灵芝复合多糖进行了DPPH自由基(DPPH·)和羟自由基(·OH)两种体外抗氧化活性测定,清除率分别达到了17%和11%。再通过食品调配原理,获得了一种牛蒡灵芝复合多糖饮品的配方:稀释倍数为6倍,10g/L蜂蜜、30g/L奶粉,制得的饮品甘甜爽口,令人回味。本论文的研究旨在为牛蒡灵芝复合多糖的加工方式提供一种新的思路,为食品加工的多样性做一份贡献。 93456

Abstract: The main effective component of Ganoderma lucidum is Ganoderma lucidum polysaccharides, and GLP can improve the immune function, anti-tumor, anti-aging, anti-oxidation and hypoglycemic effects of Ganoderma lucidum。 The major functions of Burdock are anti-cancer, antibacterial, anti-aging 。 For the development of a set of Ganoderma lucidum and burdock efficacy in one of the drinks, so this study selected compound polysaccharides of Ganoderma lucidum burdock as raw materials, the first is to get the compound polysaccharides of Ganoderma lucidum burdock DPPH free radical (DPPH -) and hydroxyl radical (- OH) for the determination of two kinds of antioxidant activity in vitro, the clearance of 17% and 11% the ratio reached。 Through the principle of food blending, a formula of the compound beverage of Ganoderma lucidum and Ganoderma lucidum was obtained。 The dilution ratio was 6 times, and the 10g/L honey and 30g/L milk powder were obtained。 The purpose of this study is to provide a new idea for the processing of burdock and Ganoderma lucidum compound polysaccharides, and to contribute to the persity of food processing。
