摘要: 主要研究臭氧对苹果汁中棒曲霉素(Patulin,PAT)的降解效果及影响因素。实验 研究了苹果汁中棒曲霉素初始浓度、苹果汁稀释倍数、处理时间、苹果汁 pH、臭氧处理 浓度等因素对苹果汁中棒曲霉素在臭氧作用下降解的影响。结果表明,臭氧对各浓度的 PAT 都有降解作用,浓度越低降解效率越高;棒曲霉素降解率随着稀释倍数增加而增加, 随着处理时间的加长,苹果汁中棒曲霉毒素的降解效果越好,30min 后棒曲霉素基本被降 解完全,苹果汁的 pH 越大,臭氧降解效率越高。臭氧处理浓度越大,苹果汁中棒曲霉素 的降解率越高。93516

Abstract:The main effects of ozone on the degradation of patulin (PAT) in apple juice and theinfluencing factors were studied。The effects ofthe initial concentration of patulin in apple juice, apple juice dilution multiples, ozone treatment time, apple juice pH and ozone treatment concentrationon the degradation of patulin under ozone were studied experimentally。The results show that ozone has a degradation effect on PAT at all concentrations, the lower the PAT concentrate was, the better the effect of degradation was。The degradation rate of Patulin increased by the increased of dilution factor。With longer treatment time that Patulin in apple juice degradation effect is better。 After 30 min, patulin is basically degraded completely。 The higher the pH of apple juice, the higher the efficiency of ozone degradation。 The higher the ozone treatment concentration, the higher the degradation rate of patulin in apple juice。
