摘要:黄酒和啤酒是我国人民喜爱的饮料。酒中含有丰富的矿物元素,矿物元素的含量对酒的品质有很大的影响。有益矿物元素与酒的保健功能有很大关联,有毒有害金属元素则会影响人体健康,应该控制含量。33912
本实验采用石墨炉原子吸收分光光度计测定12种黄酒样品和9种啤酒样品中6种无机元素(金属元素Fe、Zn、Se,重金属元素Pb、Cd、Cu)的含量,并作出比较分析评价。
结果表明,黄酒和啤酒中的Fe和Pb含量都很高,黄酒样品中Fe、Pb元素含量最高分别达到4.640mg/L、2.优尔mg/L;而在啤酒样品中则分别为0.724mg/L、1.292mg/L。各样品中Zn、Se、Cd、Cu元素含量偏低,黄酒样品中这四种元素含量最高分别为171.664μg/L、223.00μg/L、250.363μg/L、197.097μg/L;其在啤酒样品中则分别达到81.133μg/L、131.46μg/L、67.851μg/L、44.277μg/L。黄酒中无机元素含量整体高于啤酒。不同类型、不同品牌、不同产地黄酒中矿物元素含量均存在很大的差异,而储存年份对黄酒中矿物元素含量影响很小。分析不同品牌的啤酒,矿物元素的含量均存在一定差异;啤酒浓度对其矿物元素含量影响很大。
本研究结论可为黄酒和啤酒营养价值评价,风稳定性预测,以及食品安全保障提供参考。

Analysis and evaluation of mineral elements in Low alcohol liquor
Abstract:
Rice wine and beer are people’s favourite drink in our country. There are rich trace mineral elements in wine, which are mixed by the various links in the production chain of wine, and the content of mineral elements also has a great relationship with the quality of wine. Beneficial mineral elements have great relationship with the healthy function of wine, however, poisonous and harmful elements are bad for health, and we should control the content.
We determined the content of six mineral elements (Metal elements: iron, zinc, selenium, and heavy metal elements: lead, cadmium, copper) by the graphite furnace atomic absorption spectrometry, which in twelve rice wine samples and nine beer samples. And we make a comparative analysis and evaluation.
The results show that rice wine and beer are both rich in iron and lead, the contents of iron and lead in rice wine samples were 4.640mg/L and 2.优尔mg/L; while in beer samples were 0.724mg/L and 1.292mg/L respectively. The contents of copper, cadmium, selenium and zinc in samples were lower, and the contents of the four elements in rice wine samples were 171.664μg/L, 223.00μg/L, 250.363μg/L, 197.097μg/L; while in beer samples were 81.133μg/L, 131.46μg/L, 67.851μg/L, and 44.277μg/L. The content of inorganic elements in rice wine is higher than that of beer. There are great differences in the content of mineral elements of rice wine between the simples which are different types, different brands, and different producers. However, the storage year of the rice wine has little influence on the content of mineral elements. There are some differences in the content of mineral elements between the beers which are different brands; and the concentration of beers has a great influence on mineral elements content.
The conclusions of this research can provide references for the evaluation of nutritional value, flavor stability and food safety of rice wine and beer.
