    摘要:环境中某些金属离子的污染经常导致粮油制品中某些矿物元素含量超标。本论文应用微波消解、石墨炉赛曼原子吸收光谱仪等仪器,对食用植物油样品中镉、硒、铅、锌、铜5种矿物元素含量进行分析来研究食用油的食用安全性。首先探讨了样品消解方法及最佳消解条件,结果表明:采用微波消解,样品量为0.3ml,以3mL硝酸(优级纯)作为消解酸,过程以140℃保持2min,170℃保持2min,190℃保持4min,功率为400W的条件消解得到的样品效果最佳。其次优化了石墨炉赛曼原子吸收光谱仪测定各矿物元素含量的参数。最后应用优化的方法对9种食用油样品中5种矿物元素含量进行分析,结果表明:9种植物油中Cd含量大小依次为:煎炸油(L)>玉米油>芥花油>香菜油>橄榄油>花生油>葵花籽油>煎炸油(S)>大豆油;Se含量大小依次为:煎炸油(S)>香菜油>煎炸油(L)>大豆油>花生油>芥花油>葵花籽油>橄榄油>玉米油; Pb含量大小依次为:玉米油>煎炸油(S)> 香菜油>芥花油>煎炸油(L)>葵花籽油>大豆油>花生油>橄榄油;Zn的含量大小依次为:煎炸油(S)、煎炸油(L)、橄榄油>芥花油、大豆油、花生油、葵花籽油>玉米油>香菜油;Cu含量大小依次为:香菜油>煎炸油(S)> 煎炸油(L)>花生油>葵花籽油>大豆油>玉米油>芥花油>橄榄油。进一步分析对比各种植物油中各矿物元素含量,结果表明:玉米油、芥花油、煎炸油(S)、煎炸油(L)中重金属元素含量较高,长期食用将对人体健康产生危害;大豆油、花生油、葵花籽油、橄榄油中重金属元素含量在限量以内,其他金属含量也均比较合理。
    通过对各矿物元素含量的分析与和国家限量标准的对比,为人们选择低重金属富集型食用油或无公害食用油提供了新的实验理论数据。4834

    Analysis of mineral elements content in edible oil
    Abstract: Some metal ions in the environment pollution often cause some mineral elements content in grain and oil products exceed the standard. The application of microwave digestion, graphite furnace atomic absorption spectrometer zeeman, carries on the analysis to the content of 5 kinds of mineral elements in the edible vegetable oil samples of cadmium, lead, selenium, zinc, copper to study on food safety of edible oil. First discusses the sample digestion method and the optimum digestion condition, results showed that: the microwave digestion, sample amount is 0.3ml, with 3mL nitrate (GR) as digestion acid, keeping 2min at 140 ℃, 170 ℃ 2min, 190 ℃ 4min, power 400W condition to the best sample digestion. Optimize of parameters followed by Graphite Furnace Atomic Zeeman to measure the content of mineral elements absorption spectrometer. Finally the application of optimize the method to analyze 9 kinds of edible oil content of 5 mineral elements in samples. The results show that: the size of the Cd content of 9 kinds of vegetable oil in oil were: frying oil (L) > corn oil>canola oil>coriander oil, >olive oil>peanut oil>sunflower seed oil> frying oil (S) > soybean oil; Se content is as follows: frying oil (S) > coriander oil >frying oil (L) > soybean oil>peanut oil> canola oil>sunflower oil>olive oil>corn oil; Pb content is as follows: corn oil>frying oil (S) > coriander oil>canola oil>frying oil (L) > sunflower oil>soybean oil) > peanut oil >olive oil;  The size content of Zn were as follows: frying oil (S) > frying oil (L) > olive oil> canola oil> soybean oil> peanut oil>sunflower oil>corn oil> coriander oil;Cu content is as follows: coriander oil > frying oil (S) > frying oil (L) > peanut oil>sunflower oil>soybean oil>corn oil>canola oil>olive oil. Further analysis of the content of mineral elements, comparison of various plant oils showed that: corn oil, canola oil, frying oil, frying oil (S) (L) the content of heavy metal elements in high, long-term consumption will cause harm to human health; the content of heavy metals in soybean oil, peanut oil, sunflower oil, olive oil in limited within, other metal content were also more reasonable.
