摘要:酚类化合物这种次生代谢物质在植物体当中非常重要,同时分布广泛,本研究的目的在于研究从红葡萄果实渣中提取多酚化合物的方法。通过酶消化和乙醇提取红葡萄果渣的多酚化合物,发现真菌淀粉酶和纤文素酶在促进果渣中多酚释放中是最有效的。在24℃条件下将时间控制为2小时的1%纤文素酶是最佳处理,果渣提取物中含有大量的总多酚,黄酮,单宁以及一些花青素,并且这些提取物中具有抗氧化活性。证实了利用来自葡萄加工副产品的提取物作为营养药品,药物或化妆品领域的功能性和创新性产品的成分的可能性。37294 毕业论文关键词:葡萄;多酚化合物;酶;氧化性
Characterization of polyphenolic compounds extracted from grape and antioxidant activities
Abstract:Polyphenolis, an secondary metabolite is important in plants. The purpose of this study was to study the extraction of polyphenols from red grape pomace(Vitis vinifera L.). Through enzymatic digestion and ethanol extraction of wet (WP) red pomace , it was found that promoting polyphenol release in WP, fungal amylase and cellulase were most effective. 2 hour 1% Celluclast was the best treatment under 248C in releasing polyphenols of WP samples. The extract of pomace contain lot of total polyphenols, flavonoids, tannins and anthocyanins. These extract also has antioxidant activities. The extracts as a component of functional and innovative products in the field of nutraceuticals, pharmaceutical or cosmetics are demonstrated in the availability of extracts from grape processing by-products.
